White choc and cranberry muesli cookies

(makes 24)
In the ongoing journey of trying to use up this massive bag of craisins, i sacrificed being healthy for the day and decided to make some cookies :) I mean, cranberries are healthy...
Yay for a bit of free time and some baking fun!

Prep time: 15 min
Cooking time: 20-25min

Ingredients:
160g butter, softened
2/3 C brown sugar
2 eggs
1 1/2 C oats
1 12 C plain flour
1 tsp baking soda
1/2 tsp salt
1 1/4 C craisins
2/3 C white chocolate chunks

Method:
1. Preheat the oven to 180˚C, and line 2-3 baking trays with baking paper.
2. Beat the butter and sugar together with an electric mixer until well-combined. Beat in the eggs.
3. In a separate bowl, combien the oats, flour, baking soda and salt.
4. Gradually combine the dry mixture into the wet mixture, until all the flour and oats stick together.
5. Add in the cranberries/craisins and white chocolate and mix together.
6. Roll into small balls, then flatten and bake for 15-20min until brown. 
7. Cool for 5min on the tray, then on a cooling rack for 5-10min. Serve warm!!
