So the time of the year has come around again and the St Barnabas Bossley Park Christmas Fete was on last Saturday! We were fairly unprepared this year, although the idea had been simmering since last Christmas of having a 'live' cooking stall, fresh vegetables, meat and a bit of fun cooking for 100+ people!

Night before sauce trial
This is a great event held annually and involves live music, delicious food stalls, a jumping castle, face painting, hair-spraying, balloon animal-making and most of all, a great message, carols and Christmas 'play' at the end of the night! The turnout seemed great, although Paul and I didn't see much except for the many hungry faces, the wok, pan and the ingredient line-up! What a long, eventful but fun day! Praise God for the weather and the great turn-out!

Vermicelli salad with lemongrass beef
Ingredients:
3 kg beef
1 kg onion
50g 2.5 kg beef
10 cucumbers
10 carrots (750g)
4-6 punnets cherry tomatoes
1.5 iceberg lettuce

Marinade:
100g ground lemongrass
150mL fish sauce
3-4 T sugar

Nuoc cham sauce (revised for 1L of sauce):
300mL fish sauce
150mL boiling water
100mL lemon juice
9 T caster sugar
5 tsp garlic

NB. Did not realise how bad my maths is until this moment where i had to stop for 15min, get out a calculator and paper and ask Paul several times about conversions from tablespoon to mL... *sigh*

For myself, reference point; 1T = 15mL

Mint, coriander, fried shallots and garlicky fish sauce for self-garnishing

Hokkien noodle stir-fry with chicken and vegetables
Ingredients:
5kg chicken
9kg hokkien noodles
5 kg broccoli (18 broccoli)
2 kg onion
1 kg carrot
20 yellow capsicum (3-4 kg)
2 kg mushrooms

Chicken marinade:
Soy sauce
salt
sugar

Sauce (1.5L):
soy sauce
dark soy sauce
oyster sauce
rice wine vinegar
Chiu chow chilli oil
Paul's secret ingredient that adds the spice kick
Lessons learnt / reflections for next year:
1. Definitely need a better-powered stove top than a hotpot cooking stove.
2. Need to bring something to block the wind so the gas doesn't lose heat!
3. Pre-steam the broccoli to make things faster
4. Chopping takes HOURS (leave 6hrs at least!)
5. Make more beef! (4kg beef)
6. Flemington markets are the BEST!
7. Outfits and a catchy name make stalls just that little bit more fun!
