Fig, rocket and gorgonzola salad

(serves 2)
Figs are such a gorgeous summer fruit, so sweet, juicy and colourful! They're high in fibre and calcium and so are very good for you too, however how they are pollinated is a little bit gross so best not to think about that! 
My first ever experience of eating fig was an hors d'oeuvre of fig, gorgonzola and walnut and i remember being blown away by this intense but perfectly well-balanced combination! This salad mimics that combination of bitter, sweet, creamy and nutty coming together wonderfully in a simple side dish, perfect for BBQs!

Prep time: 15min

Ingredients
2 figs
100g rocket
50g gorgonzola
handful of pine nuts, toasted

Dressing
1 T balsamic vinegar
2 tsp honey
2 T olive oil
salt 

Method
1. Combine the dressing ingredients by shaking together and seasoning with salt to taste.
2. Wash and dry the rocket and dress with half the dressing.
3. Cut the figs either into sixths horizontally into circles or into segments. 
4. Break up the gorgonzola, sprinkle with pine nuts and drizzle the remaining dressing!
