Fig, ricotta, rocket and hazelnut salad

This is a great combination that i tried at Gather on the Green, a great local family- and dog- friendly cafe in Camperdown near work. They have lovely friendly staff and even though most of the time i just get a coffee and eat my lunch with my colleague, they are always super nice about it! Hurray for casual cafe culture :)
This salad actually doesn't require an ounce of effort and is such a superbly fresh, sweet, crunchy combination that i totally fell in love at first taste! Realising i could make it myself for half the price, i proceeded to do so and am here to share this fancy looking salad with everyone!
I am a self-confessed fig-fanatic.. mnom mnom!
Prep time: 10 min

Ingredients
2-3 figs
50g fresh ricotta
80g rocket
30g hazelnuts, roasted
caramelised balsamic vinegar
olive oil
salt and pepper

Method
1. Wash, dry and tear up the rocket and place in a salad bowl. Dress with olive oil, salt and pepper.
2. Scoop the ricotta into bite-size pieces into the salad bowl.
Just add everything as it comes..
3. Cut the figs into sixths or eights and arrange on top. Sprinkle with hazelnuts and a swizzle of caramelised balsamic and olive oil!
