Radicchio, spanish onion, fig and prosciutto salad

(serves 2)
Figs are still in season and they are just the best ingredient to instantly jazz up your salad with some classiness and sweet summer style! Their  sweet, soft, juicy nature makes pairing it up pretty easy; choose something slightly bitter, something crunchy and/or something salty and you have a winning combo! Caramelising slightly less ripe figs with a touch of brown sugar under the grill works well too!
Prosciutto and figs are such great friends, maybe because they bring back these lovely memories of summer in Italy :)

Ingredients
1 spanish onion
2 figs
60g radicchio
60g rocket leaves
handful of basil leaves
1/2 punnet of cherry tomatoes
handful of hazelnuts, toasted and crushed
1-2 slices prosciutto
caramelised balsamic
olive oil
salt and pepper

Method
1. Cut the spanish onion into wedges, toss with olive oil, salt and pepper and roast in the oven for 20 minutes until soft and crisp.
2. Cut the radicchio into thin slices. Tear the rocket and basil leaves and combine together with olive oil, caramelised balsamic, and salt to taste.
3. Add in the halved tomatoes, torn prosciutto, sliced figs and crushed hazelnuts and serve!
