This is a 'raw' salad, i.e. chop and combine! This fennel salad has a sweet apple twist, and is perfectly balanced with the crunchy bitterness of walnuts. It's a great winter salad option, served on the side of roast or soup! For us this was a quick dinner using minimal ingredients ~ easy win :)

Ingredients
1 apple
1 bulb fennel
handful of walnuts, crushed
Dressing
Olive oil
1 tsp dijon mustard
Juice of ½ orange
Juice of ¼ lemon
Salt, pepper
1 T honey (adjust according to sweetness of orange juice)
Method
1. Finely slice the apple and the fennel.
2. Prepare the dressing by combining the olive oil, mustard,
orange and lemon juice. Season to taste with honey, salt and pepper
3. Dress the apple and fennel and stand for 10 minutes prior to
serving.
