Korean sweet soy potato side dish

(serves 2-4)

Once upon a time I was told that when you go to eat Korean food, the many many side dishes are not only free, but refillable! This was such a joyous moment as I realised that I can ask for this super tasty potato side dish over and over again! Sadly it's not always available at all restaurants and this results in severe disappointment, but now i have finally gotten around to learning how to make it for myself! Hurray - can't believe it's so easy - thank you Maangchi!

Cooking time: 10-15min

Ingredients
2 medium potatoes
1 T vegetable oil
1/2 brown onion
2 cloves garlic
1/2 C water
2 T soy sauce
1 T brown sugar
1 T sesame oil
1/2 tsp toasted sesame seeds

Method
1. Peel the potatoes and cut length-wise into 1cm slices, and then into 1x1cm cubes. Dice the onions and the garlic.
2. Wash the potatoes thoroughly in a colander under cold water to remove the starch.
NB. Don't skip out on this step otherwise you can taste it in the texture of the cooked potatoes.
3. Heat a pan on medium heat and place 1 T vegetable oil in. Once the pan is hot, add the potatoes and garlic and stir until slightly translucent. Add the onions and sauté for another 3-4 minutes.
4. Add 1/2 C water, soy sauce and brown sugar and put the lid on the frypan for approx 10 minutes, stirring occasionally until the sauce thickens. When most of the liquid has been absorbed, take the lid off and allow it to reduce further.
5. Take off the heat and stir in the sesame oil and sesame seeds. Serve warm or cold as a side dish.
