Sweet potato, zucchini and cheese muffins

(makes 30)
A variation on the previous savoury muffins, with grated sweet potato, bit less cheese and butter. It's a slightly more wet mixture but turned out quite moist and tasty, and was a hit with bub which was the most important, as she will happily sit in the high chair for an extra five minutes :)

Prep time: 20 minutes
Cooking time: 20 minutes

Ingredients
250g sweet potato
1 medium zucchini
80g tasty cheese
2 cups self-raising flour
50g butter, melted
3 eggs
1/2 cup light milk

Method
1. Preheat the oven to 180C and spray the muffin tray with spray oil. 
2. Use the food processor to grate the sweet potato, zucchini and cheese.
3. In a large mixing bowl, mix the butter, eggs and milk together.
4. Add the flour into the mixing bowl, and stir through the sweet potato, zucchini and cheese. 
NB. Don't over-mix otherwise muffins will turn out too chewy. 
5. Bake for 15-20 minutes until golden brown - thought not too brown I discovered as bub doesn't seem to chew threw the crispy bits!
6. Cool for 5 to 10 minutes, then remove from the pan.
