Apple cinnamon oatmeal cookies

A new fun activity in the house lately has been baking with a very enthusiastic toddler! My little girl is so cute, she has her little apron and chef's hat (awesome hand-me-downs) and is ever so serious about 'helping mummy cooking'. She is absolutely stoked to be part of the action and stands tall on the ottoman we placed next to the bench, and is very involved with measuring things out, cracking eggs, mixing batter, making a mess and stopping to eat anything that looks good, e.g. apples. Lots of fun making something yummy to munch on together.
Prep time: 15 minutes (double this with a toddler!)
Cooking time: 15 minutes 

Ingredients
1 1/4 cups (177g) all purpose flour
1 1/4 cups (120g) rolled oats
1 tsp ground cinnamon
1/2 tsp baking soda
1/4 tsp salt
110g unsalted butter, softened
1/2 cup (110g) brown sugar
1 large egg
1 tsp vanilla extract
1 medium Granny Smith Apple, finely chopped and peeled, equates to about 1 cup (120g)
2 tsp fresh lemon juice 

Method
1. Preheat the oven to 180 C. Line two large flat trays with baking paper.
2. In a mixing bowl, mix together flour, oats, cinnamon, baking soda and salt.
3. In a separate mixing bowl, cream together the butter and brown sugar until combined. Mix in the egg and vanilla extract
4. Toss apples with lemon juice in a small bowl. Add flour mixture to the egg and vanilla mixture, and mix until combined, then mix in the apples.
5. Scoop approximately one tablespoon out at a time, roll the dough into a ball and place onto the prepared trays, spacing the cookies approximately 5cm apart. Flatten them slightly.
NB. Cookies don't expand much.

6. Bake for 15 minutes, or until brown. Remove and cool before storing in an airtight container for up to 5 days.
