Sweet potato loaf

(makes 1 loaf, serves 6-8)
This is a very dense healthy loaf packed with nutrition. My friend recommended me to this blog and I had fun browsing through looking for new healthy baking ideas. Hubby and toddler loved it, I felt it was a little dry and definitely tasted very (possibly a little too) healthy! Not a bad thing, not my personal favourite but will bake again and do recommend it when wanting some guilt-free snacking!

Cooking time: 40 min

Ingredients
2 cups almond meal (or ground almonds)
1/2 cup desiccated coconut
300 g sweet potato
1 Tbsp chia seeds
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground turmeric
60mL olive oil
60 mL honey
2 tsp baking powder
1 Tbsp vinegar
sunflower and seseame seeds, to top (optional)

Method

1. Preheat the oven to 180 C.
2. If using fresh almonds, grind them in the food processor then place in a large mixing bowl. Add the coconut.
3. Grate the sweet potato then add to the bowl. Add the chia seeds, cinnamon, nutmeg and turmeric and mix well.
4. In a separate bowl, whisk the eggs lightly. Add the oil to the eggs and whisk together. Add in the honey, baking powder and vinegar and whisk together.
5. Add the wet mixture to the dry bowl and thoroughly combine. Pour mixture into a lined loaf pan and sprinkle on top with pumpkin or sesame seeds to decorate, if desired.
6. Bake for 30-40 minutes until brown or a skewer inserted into the middle comes out clean. Remove from the oven and leave in the tin to cool.
