Pear, sultana and walnut muffins

Just been busy working our way through this Muffin Bible, one could call this an isolation project? We have been picking out some interesting ones, decreasing the sugar by at least a half and enjoying some fresh ideas for snacks. Thankfully my little girl loves muffins (both making and eating) as much as me :)

Cooking time: 20 min

Ingredients
2 cups flour
1/4 cup brown sugar
1 tsp baking soda
1/2 tsp salt
2 tsp ground ginger
1 tsp ground cinnamon
pinch of ground nutmeg
1 cup natural yoghurt
1/2 cup oil
3 Tbsp maple syrup
1 egg, beaten
1 1/2 cups diced pears
1/2 cup sultanas
1/4 cup chopped walnuts

Method
1. Preheat the oven to 200 C.
2. In a large bowl mix together the flour, brown sugar, baking soda, salt and spices.
3. In a separate bowl, mix together the yoghurt, oil, maple syrup and egg.
4. Make a well in the centre of the dry ingredients and add in the yoghurt mixture. Stire to combine, then fold in the pears, sultanas and walnuts.
5. Spoon the batter into the muffin tin (lightly sprayed with oil) and bake for 20 minutes. Serve warm.
