Spectacular Spinach Dip

(serves 6-8)
I still remember the first time i tasted this. It was after a long, bruise-filled day at the snow attempting to pick up the mysterious skills of snow-boarding with very little success. Then we came home, battered teenagers coming down from the adrenalin rush, feeling muscles we never knew existed, and one of the wonderful parents made this. Best tasting dip EVER. Since then, my friend Carolyn made this one of her few "specialty" dishes (most likely due to the 1-bowl, 2-step process) and at some point shared the recipe with me! Was thinking of you at my house-warming!

Prep time: 5 min
Cooking time: 5 min

Ingredients:
1x 250g Finely Chopped Frozen Spinach (Logan Farm's)
1x 250g tub of lite sour cream
1x packet Continental Spring Vegetable soup mix
handful of green shallots, finely diced (optional)

Method:
1. Defrost the frozen spinach, in the microwave and then drain as much water out as possible.
2. Mix the sour cream and Spring Vegetable Soup mix into a bowl, add the spinach and shallots and mix!

  1. eheh i add spanish onions, chilli and lime to mine =) but never tried it with soup mix.

  2. Hey.. that's a good idea! not sure about the chilli, but i like the rest! yeah, the soup mix gives it all the flavour lol.. you have to find the right one!
