The 1, 2, 3, 4, 5 Pork Ribs

Another family favourite with a recipe that's easy to remember, we call them the 'counting' ribs as you can count out the sauce ingredients with your fingers. I hate to admit that you really need to get the cut of ribs with that layer of fat in between (despite the unhealthy factor), as the oil released during cooking does add to the tastiness, maybe just have it in small doses! The meat is tender and succulent and the sauce has this beautiful balance between sweet and salty, and is incredibly addictive! Best served with rice and veg.

Prep time: 10 min
Cooking time: 35 - 40 min

Ingredients: 
500g spare ribs
4-5 garlic cloves
1 T Chinese Xiao Xing wine
2 T vinegar
3 T sugar
4 T soy sauce (2 T soy sauce, 2 T dark soy)
5 T water
Oil
 
Method: 
1. Prepare the sauce by adding the XiaoXing wine, vinegar, sugar, soy and water into a medium-sized pot and bring to the boil.
2. Meanwhile, cut the spare ribs into 3cm lengths.
3. Heat a wok with 1 T oil, add in the garlic for 1 min, then add in the ribs and cook for 3-4 minutes to seal the juices.
4. Add the ribs to the sauce and cover and simmer for 35-40 min. It's cooked when the ribs are tender!
