Green Tea Jelly with Sago

(serves 10)
Ok, so this doesn't even really count as a recipe as it doesn't actually get much easier than jelly, but i took some pretty photos in the making of it and thought it's a fun, easy idea and seemed like a hit on the night! 


Prep time: Have to soak sago overnight
Cooking time: 10 min


Ingredients:
1 packet green tea jelly
1/4 C sago, soaked overnight in water
Water
Optional (if you want a top and bottom layer of sago):
Extra 1/4 C sago

50mL coconut milk or soy bean drink


Method:
1. Cook the green tea jelly with hot water according to the packet.
2. Cook the sago in boiling water for 2-3 minutes until half the sago starts going see through. Take it off the heat and continue to stir until all the sago is see-through, then drain in a narrow sieve.
3. Cool the jelly mixture slightly, then mix the sago through and pour into moulds and refrigerate for at least 3-4 hours.
4. If you want an extra layer of sago on the bottom, cook up another batch of sago and mix it in with coconut milk/soy bean drink. Pour on top of somewhat-set jelly (after maybe an hour of refrigeration?), then covered in the fridge.
5. To serve, use a spoon to release the edges and flip it over!
