French-Cut Lamb Chops!

(serves 4)
Mmm... lamb must be one of my favourite meats, so juicy, tender and naturally flavoursome! They are always such a treat as they're a bit on the expensive side so don't usually splash out on them, but mum totally knows how to make my day! 
I tried French cutting them for myself this time, just to see if i could acquire a new skill. This involved google imaging "French Cut Lamb Chops" and trying out my culinary copying skills..some form of self-taught French cooking school?! Anyhow, they do look a lot better, feel a bit healthier and it makes them neater to just pick up and chomp away! 

Prep time: 15 min
Cooking time: 5-10 min

Ingredients:
12 lamb chops
Mix of Rosemary &  Oregano, or Masterfoods "Lamb herbs mix"
2 cloves garlic, finely chopped
Olive oil
Balsamic vinegar
Salt and Pepper

Method:
1. Rinse and pat dry the lamb chops.
2. Using a small sharp paring or boning knife, cut away the fat from the chop and remove the meat along the last 5cm of bone.
3. Marinate the chops in the vinegar, olive oil, herbs, garlic and salt and pepper for at least 2-3 hours.
4. Grill under high heat for 3-4 minutes on one side, then turn over and cook for another 2-3 minutes for medium-rare.
NB. Use a pair of thongs to press into the middle of the chop to determine how cooked it is. Remove when it is your desired temperature (ie how cooked you want it) and let it rest for 2-3 minutes.
Alternatively, you can use a sandwich press if you are feeling lazy, and this cooks them in 2-3 minutes and gives you the char-grill marks, but not necessarily the crunchiness on the outside ~ difficult trade-off!
5. Serve with a delicious potato dish and a side salad!
