Garlic & Ginger Prawns

(serves 4, with sides)
Fresh prawns are such a delicious dish to have on the table, totally fancies up the whole meal instantly! The most important thing is not to overcook them. This is a simple Asian household recipe with the classic ginger, garlic and shallots to stir-fry the prawns, super quick and yummy!

Prep time: 20 min (mostly the peeling and de-veining process)
Cooking time: 10 min

Ingredients:
1kg King or Green Prawns
2 tsp minced ginger
4 cloves garlic
2 shallots
1 small chilli, optional
Salt
Sunflower oil

Method:
1. Peel, devein and butterfly the prawns. Place in a bowl and gently mix in 2 tsp salt and let it rest for 4-5 minutes.
2. Finely chop the garlic and shallots.
3. Heat a wok on high heat with 2 T oil. Once the wok is hot, add the prawns in and stir-fry for 2-3 minutes until slightly undercooked. Remove from the wok and set aside.
4. Clean the wok and heat it on high heat again with 1 T oil. Add 1-2 tsp salt into the oil and gently stir it through.
5. Add the ginger and garlic and toss quickly until the aroma is released, then add in the shallots. Put the prawns back into the wok, discarding any excess juice. Stir-fry for 1-2 minutes and done!
Optional: Add in one finely chopped chilli right at the end and toss through for an extra punch.
6. Serve with rice and vegies.. or a vermicelli base!
