Home-made Green Tea (Matcha) Ice Cream

(serves 4-6, makes one ice-cream maker tub)
So the first time i tried this it was a bit of a fail, but the lesson learnt was that you just can't skimp on the calories for ice-cream! If it's not full cream, it doesn't work. On the other hand, using lite milk didn't seem to make much of a difference so that helps a little! Anyhow, since one of my favourite people in the world came home recently, i thought i'd help to convince her to stay in the country by making one of her favourite desserts :) Welcome back Claudia!

Prep time: 20 min (+ 2hrs in the fridge)
Cooking time (via the ice-cream maker): 25 min + 3hrs in the freezer

Ingredients:
1 C thick cream
1 C milk
1/2 C caster sugar
2 T matcha powder

Special equipment: Ice-cream maker. 
NB. You need to put the ice-cream maker tub in the freezer a day before!

Method:
1. Put the cream, milk, sugar and matcha powder into a saucepan. Whisk over medium heat and bring to the boil.
2. Continue whisking until it becomes foamy, approx 5min. Let it cool then refrigerate for at least 2hrs  (or overnight) until it is completely cool.
3. Put the cooled mixture into the ice-cream maker for 20-25min, keeping watch over it until it is a soft-serve consistency.
4. Remove it from the tub with a spatula or a wooden spoon, put it in an airtight container and put it in the freezer for at least another 3hrs before serving.
5. Serve by itself, or with red bean paste or mochi balls!
