(makes 4 patties, or 20 meatballs)
This recipe i admit i have only ever watched my sister Bec make and haven't actually gotten around to/needed to do it myself. Somehow she got her hands on this deliciously juicy meatball/patty recipe and it's so simple! Figured i'd blog it first, and try it out later, though maybe i will be able to avoid having to make it for myself lol, after all food always tastes better when someone else cooks for you!

Prep time: 40 min
Cooking time: 15 min

Ingredients:
Meat patty mix:
400g pork and veal mince
200g beef mince
1/4 small brown onion, finely chopped
1 tsp salt
1/2 tsp pepper
2 slices fresh or toasted white bread
1/4 C milk
1 egg

Other burger ingredients:
1 tomato
1/2 cucumber
1/2 spanish onion
100g mix lettuce leaves
1 beetroot, boiled and thinly sliced OR home-made beetroot relish
4 eggs, optional
4 rashers bacon, optional

Method:
1. Pour milk into a shallow bowl, place the bread into the bowl, then quickly turn it around and soak the other side.
2. Remove the crust and squeeze out as much milk as possible and set aside. 
3. Combine the pork and veal mince, onion, salt, pepper, egg and bread in a large bowl and use your hands to combine the ingredients.
4. Refrigerate for 20-30 minutes.
5. Meanwhile, prepare the rest of the burger ingredients. Rinse and dry the lettuce leaves, thinly slice the tomato, cucumber, spanish onion and beetroot. 
6. Cook the bacon and eggs (optional).
Woot! Double yolk!
7. Wet your hands and split the meat into quarters, then roll out into meat patties approx 1.5cm thick (for extra juicyness).
8. Heat a pan with 1/2 T oil on medium heat and fry up the meat patties for 4-5 minutes on each side. 
NB. You may need to check by poking in the middle to check it's cooked if it's quite thick.
9. Assemble the burgers and serve with roasted potatoes and salad!
Or, they're pretty filling in themselves...
