Pasta triangles with fresh tomato and basil

(serves 1)
Hmm.. lately i have been stuck at home writing my thesis ~ it feels a bit like house or computer arrest, or what i imagine that to feel like. Amidst the ramblings to myself, continuous editing of the same document, falling-asleep buttocks muscles from endless hours in front of the computer and somewhat stressful deadlines... there is some joy! Hurray for fresh pasta and super quick and scrumptious meals!

Prep time: 10min (not including fresh pasta)
Cooking time: 10 min

Ingredients:
1 truss tomatoes
3 sprigs fresh basil
6 mushrooms
2 cloves garlic
1 tsp dried thyme
salt and pepper
10g Parmesan, grated
2 squigs of truffle oil
Fresh pasta offcuts, cut into triangles (see Pasta recipe)

Method:
1. Cut the tomatoes into eighths, and the basil into thin strips.
mMm.. for the love of the simple and fresh tomato and basil !
2. Peel and cut the mushrooms and garlic into thin slices.
3. Heat a pan on medium heat, add 1/2 T olive oil and add the garlic and thyme and sauté for 15-20sec until the aromas are released.
4. Add in the mushrooms and continue to sauté for another 4-5 minutes on high heat. Season with salt and pepper. Turn off the heat and sprinkle with parmesan and a squig of truffle oil and toss to combine.
5. Heat a pot of boiling salted water and cook the pasta for 2-3 minutes until al dente. Drain.
6. Toss the pasta in salt, pepper, olive oil and a squig of truffle oil. Add in the tomatoes, basil and mushrooms, toss and sprinkle with parmesan and eat!!
