Devil Spareribs with roast potatoes

(serves 2)
Ribs - morsels of finger-licking goodness... served with chips or roast potatoes, 45min to cook but less than 10min to devour! This old family favourite is really easy to prepare and reminds me of being a kid again: trying to eat as fast as you can so you don't lose out on the rib count! Apparently that race never ends if you choose to share this with your boyfriend *sigh*

Cooking time: 45min

Ingredients:
1 rack pork ribs
1/2 brown onion
1 tsp salt
1/2 tsp black pepper, ground
2 T honey
2 T tomato sauce
1 T worchestershire sauce
1/2 T mustard
1 tsp chopped garlic
4 potatoes
2 tsp mixed herbs

Method:
1. Thinly slice the brown onion, then marinate the ribs in all the ingredients for at least 1hr (preferably overnight).
2. Preheat the oven to 200˚C.
3. Cut the potatoes into quarters or sixths and dress with salt, pepper, olive oil and mixed herbs and place in roasting tray. 
NB. You can also par-boil (before dressing them) for 10-15min to make it faster in the oven.
4. Roast the ribs for 30-40 minutes, or until golden brown (you can add a few slices of garlic on top for some extra tasty roasted garlic). 
5. Drizzle honey on top and continue to roast for another 5 minutes until sticky and crunchy!
6. Serve with roasted potatoes or chips and salad!
