Strawberry, spinach and avocado salad

with sesame and chia seed vinaigrette dressing
(serves 4) 
Strawberry season is here! Miraculously, these sweet, juicy, heart-shaped, Vitamin C-filled berries go from $4 a punnet down to $4 for 3 punnets!  So of course, the only logical thing to do is to get 3 punnets and work out what to do with them after! 
This dish was inspired by my friend Amy. I still remember when she made a baby spinach and strawberry salad with poppy seed dressing at one of her dinner parties 3 years ago after we first met... it was so delicious, simple and Spring! :) I've added avocados and changed it up to a chia and sesame seed dressing, mostly because i didn't have any poppy seeds, but figured this makes it extra healthy and full of omega-3 and Vitamin E too! Am getting into my nutrition facts these days :)

Ingredients
250 g punnet strawberries
150 g baby spinach leaves
1 large avocado
handful of toasted silvered almonds

Dressing
2 T apple cider vinegar
2 T honey
1/4 C olive oil
2 pinches salt
2 tsp sesame seeds
1 tsp chia seeds

Method
1. Wash, hull and slice the strawberries. Wash and spin (or pat) dry the spinach leaves.
2. Cut the avocado in half, cut into squares then spoon out into a small bowl.
3. Make the dressing by combining all the ingredients in a small jar and shake it all together. Dress the avocado with 1/3 of the dressing.
4. Place the spinach leaves in a large salad bowl, dress with 1/3 of the dressing. Add the avocado and the strawberries and the remaining dressing. Sprinkle with almonds and serve!
Forgot to sprinkle with almonds before taking the photo, but you get the idea!
