Fish cakes

(makes 10-15 medium patties)
Trying out new ideas for finger food whilst mum is here as mum always brings us fish and I never seem to get around to buying any decent quality fish around here... I think the best would be Cabramatta but somehow I feel intimidated by the fish shops there... Anyhow, I liked these little fish bites as they're soft, juicy and healthier than fish fingers but not quite as convenient. Hubby said they tasted like mash fish, and he prefers to eat actual fish but I guess that's not really the point as we are trying to get our little one to pick food up and eat it! :P Anyhow, this one's not bad, not a favourite but reasonable option for variety. It also freezes quite well after cooked and is a handy food to take on the go. I also like that it works well in the oven rather than pan-frying as I don't have to be standing there whilst it's cooking and can minimise oil. 

Prep time: 30 minutes
Cooking time: 30-40 minutes

Ingredients
250 g potatoes
250 g fish without bones or skin (cod and salmon seem common choices but we also tried perch)
1 zucchini
10 g dill
2 stems of green shallots
50 g breadcrumbs or 2-3 slices of wholemeal bread blended in the food processor
100 g tasty cheese, grated

Method
1. Preheat the oven to 180 C.
2. Peel and boil the potatoes and steam the fish for approximately 10 minutes or until cooked and soft.
3. Grate the zucchini, chop the dill and shallots.
4. Blend the bread in the food processor until it becomes fine (if needed).  Add the potatoes, fish, dill, shallots and cheese and process until smooth. 
5. Form small patties with your hands and place on a baking paper-lined tray.
6. Bake for 15 to 20 minutes, then flip and cook for a further 10-15 minutes or until browned on both sides.
7. Serve with salad for adults or in a sandwich or as finger food for little ones :)
