Pancakes

(serves 4)
This is our go-to mass production pancake recipe, used on various occasions like youth camp and beach mission. Always a hit, they are fluffy and quick to put together, served with either fresh fruit, lemon and sugar or the classic golden syrup or whatever concoction people want to come up with! Our little girl enjoys just gobbling them down plain (or with grated apple mixed in).
Prep time: 10 min
Cooking time: 20 minutes (probably less than 5 minutes a round, so this goes up proportionally depending on how many you're making)

Ingredients
2 eggs
200mL milk
200 grams self raising flour
1.75 grams salt (about a 1/3 teaspoon)
margarine or butter (for cooking)
fresh fruit or lemon/sugar, to serve
golden or maple syrup, to serve

Method
1. Beat eggs and milk.
2. Add flour and salt and mix to make batter.
3. Melt a small portion of margarine or butter in a fry pan then pour a portion of batter (either one at a time or can pour a few if using a hot plate or a large frypan).
4. Flip the pancake when the top of the batter turns bubbly and cook for a further couple of minutes. Remove and keep warm whilst making the rest.
5. Serve warm with fresh fruit and golden/maple syrup, or lemon and sugar.
