Watermelon, mint and chia popsicles

makes 6 small popsicles

Saw this cool idea for watermelon icy-poles and finally gave it a try. We are enjoying this in the last few days of heat! The mint is a nice addition and breaks it up a little bit, the only thing I don't like is the very icy texture of the watermelon, but I guess it doesn't really blend with yoghurt or coconut milk to make a smooth ice-cream like texture... might try it another time but haven't seen any recommendations for that! Anyhow, no complaints from the toddler :)
Prep time: 10 min + 5 min (after 2 hours)

Ingredients
250 g watermelon pieces, approximately 400 g watermelon (with skin) 
handful of mint leaves, finely chopped
1 to 2 kiwi fruit

Method
1. Blend the watermelon pieces until smooth. Add in the chia seeds and chopped mint leaves and give it a shake.
2. Pour the watermelon juice into the icy poles until 7/8th full, leave for 2 hours.
3. Cut and remove the flesh of the kiwi fruit and blend until smooth. Pour in over the half-frozen watermelon juice and add in the icy pole sticks. 
4. Freeze for 6 hours or overnight. Take out and enjoy!
Note to self: Ikea 6-piece icy poles is approx 250mL liquid.
