The ultimate Choc-chip Cookie

These are soo good warm and just out of the oven, soft cookie inside and crisp around the edges, with chocolate bits melting in your mouth.. need i say more?? Not sure if my photo does it justice as the choc chunks don't seem big enough...
Prep time: 15 min
Cooking time: 10-15min

Ingredients:
150g butter, softened
3/4 cup brown sugar
1 tsp vanilla essence
1 egg, lightly beaten
1 1/2 cups plain flour
1/2 tsp baking powder
1/4 tsp salt
250 g dark chocolate (or a mix of white, milk and dark, whatever you have or want)

Method:
1. Preheat oven to 180˚C.
2. Beat the butter, sugar and vanilla until light and creamy.
3. Beat in the egg.
4. Stir in the sifted flour, baking powder and salt, and fold through the white and dark chocolate chunks.
5. Roll into balls and flatten about 1cm thick, and spread onto a tray lined with baking paper.
6. Bake for 10-15 minutes, or until golden brown.
7. Cool for 2 minutes on the tray before transferring to a wire rack.

Store in an air-tight cookie jar
