Fig, Watermelon and Mint Salad

(serves 1)
The season for figs is here! This refreshing summer side salad is delicious, super quick to throw together and just perfect to accompany a BBQ or something... The watermelon, fig and mint keep it really light and fresh! I think my inspiration came from the last few humid days or just that there was watermelon and fig around so why not?


Prep time: 10 min
Cooking time: 5 min (mix dressing and toss!)


Ingredients:
2 figs
400g watermelon
150g mix lettuce leaves
2-3 stalks of mint, with mint leaves washed and removed
handful of toasted pine nuts


Dressing:
Rind of 1 lime
Juice of 1 lime
10 mint leaves, finely sliced
Olive oil
Caramelised balsamic vinegar
Method:
1. Cut the watermelon into squares.
2. Cut the fig into sixths.
3. Make the dressing, mix half the dressing with the lettuce leaves.
4. Put the watermelon, fig and mint leaves on top of the lettuce leaves, drizzle the rest of the dressing on top and sprinkle with the toasted pine nuts!
So quick to put together that i had spare time to play around with taking photos before i succumbed to devouring it ~ can't decide which effect i like more!
