So after i made home-made pesto, i was
inspired to make gnocchi, and now that i have a whole army of gnocchi to get
through, i can try experimenting with different sauces! Funny how the world of
food does this, you make one thing which inspires you to make the next and then
you get ideas for something else! Never a shortage of tasty food to make and
eat ~ although this might only be the case for food-a-holics like me who can't
stop thinking about food all day long... not entirely sure if this is normal.

Ingredients:
100g fresh Gnocchi
2 cloves Garlic
2-3 Asparagus sticks
1/8 Spanish onion
5-6 Cherry tomatoes or mix tomatoes
2 tsp chives, finely chopped
1 tsp Thyme
1 tsp Caramelised balsamic vinegar
Salt and Pepper
Olive oil
Method:
1. Thinly slice the garlic and spanish onion. Halve the cherry
tomatoes.
2. Cut the asparagus into quarters, 3-4cm in length.
3. Boil and generously salt a pot of water and parboil the
asparagus (3-4 minutes). Remove from the pot with a slotted spoon and put
aside.
4. Put the gnocchi into the boiling water and cook until
approximately 30sec after the gnocchi floats, remove with a slotted spoon.
5. Meanwhile, heat a frypan with 1/2 T olive oil. Add the garlic,
chives, thyme and asparagus and sauté for 1-2 minutes. Add the spanish onion,
cherry tomatoes and balsamic.
6. Add the gnocchi and toss through, season with salt and
pepper.
7. Serve with a drizzle of olive oil on top!
