What to do with too many ripe avocados that you can't eat fast enough?! Guacamole is a very festive Mexican dip made from avocados, some spices and lime juice ~ delicious! I had a few recommendations that i still want to experiment with, but for my first attempt i just tried it plain with no spices, then with the paprika mix described below ~ definitely better with the spices! Other suggestions to try out were with tabasco sauce or beef taco seasoning! Best appreciated with nachos, or just with some corn chips for entertaining!A tasty bite! |

Ingredients:
2 large ripe avocados
1 spanish onion
2 tomato (or 5-6 cherry tomatoes)
Juice of 2 limes
1 tsp paprika
1 tsp cumin
1 tsp oregano
Salt and pepper
Olive oil
Handful of mint (10-15 leaves)
Handful of basil (10-15 leaves)
Method:
1. Finely dice the spanish onion.
2. De-seed and finely dice the tomatoes.
3. Finely slice the mint into thin strips.
4. For the guacamole, peel and remove the stone from the avocados, put them into a bowl and mash with a fork.
5. Add the juice of 1 lime, 1/2 the spanish onion and half the tomatoes into the guacamole mix and stir through.
6. Add the paprika, cumin, oregano, half the mint leaves, and some salt and pepper to taste.
7. For the salsa, combine the rest of the spanish onion, tomato, mint, basil, lime juice (maybe only use half a lime first and see how you citrusy you like it), salt and pepper and season to taste!
8. Serve guacamole with the salsa on the side, with tortilla strips, corn chips, or anything that seems mexican!
