Some Chinese food is so simple i'm not even sure if i should blog about it as it's barely a recipe, but as with a lot of cooking, it's more about the idea than anything else. So, i thought i'd share this family favourite that requires almost no preparation or cooking but is very tasty and fairly nutritious. It's served cold (or can be steamed for a few minutes and served warm) and is great for a light dinner dish, the crunchy shallots/chives and dried prawns add a lovely contrast to the silky smoothness of the tofu... Enjoy!

Ingredients:
1 x 250g packet of silken tofu
1/2 bunch chives (or 2-3 stems of shall0ts)
Handful of dried prawns (maybe about 40-50)
Soy sauce
Method:
1. Finely cut the chives or shallots.
2. Heat a small pan (or wok preferably) with 1 T oil, then add the dried prawns and fry until crisp. Add in the chives and fry for 5-10 sec. Remove with a slotted spoon and try to minimise the oil removed.
3. Cut the tofu into 1cm thick circles and place on a dish, drizzle some soy sauce on top.
NB. Alternatively, you can steam it in the plate for 3 minutes if you prefer it warm.

4. Decorate the tofu with a bit of chives and a few crispy dried prawns, and done!
Serve with rice and other Chinese dishes, or just as a cold starter!
i didn't know you can just cut the tofu up and serve, always thought you have to cook it through!
