So... one of the things i love about my family is our inability to walk past a good grocery deal, regardless of practicality. There have been many times when i have come home to... 3 boxes of mangoes (for a family of 4), or 20 avocados, 1kg of cranberries or... in this case, receiving a text message mid-week that said.. "we tried to call you 1000x, we have 1kg of beetroot, start thinking about what to do with it!"
So... in the former cases this was because mum would buy a box of mangoes, go to the next store and find out that it's $2 cheaper and so not wanting to miss out on a great bargain, buys another box, then the NEXT day, she walks past another store which is $5 less... so yeah... It's good for helping our creativity but not so good for the overdosing on too many yummy things! Anyhow, in this case, my solution was: home-made beetroot relish on burgers for Sunday dinner!
Prep time: 15 min
Cooking time: 30 min
3 large beetroot (approx 500g)
1 brown onion
2 tsp mustard seeds
3-4 cloves
2 tsp all spice
1-1.5 C water
1/2 C sugar
1/2 balsamic vinegar (or red wine or white
wine vinegar apparently)
olive oil
Method:
1.
Put on plastic gloves and peel
and grate the beetroot.
2. Finely dice the brown onion.
3. Heat a large saucepan on medium
heat with 1T olive oil, then add the mustard seeds, cloves and onion and cook
until onions are soft.
4. Add the beetroot, all spice and
water. Cover and cook on medium heat for 10 minutes.
5. Add the sugar and balsamic
vinegar and continue to cook until the beetroot is soft.
6. Serve on burgers, or toast or... whatever you feel like!
