(makes 18 slices or 36 squares)
These slices smell, taste, feel and almost look the same as Anzac cookies but are even easier to make because you only have to press the mixture into a tray, rather than shaping them into biscuit balls! I had a version of this at church camp recently, and it was absolutely dangerously addictive, therefore i was inspired to try it out this Anzac weekend! My non-fan-forced oven makes me sad as it burnt the bottoms a little, but the recipe is sound and will definitely try it again once i am over the sugar overdose...

Ingredients:
2 1/2 C rolled oats
2 1/2 C plain flour
2 C desiccated coconut
2 C brown sugar
350g butter, melted
4 T golden syrup
1 tsp bicarbonate soda
4 T boiling water
Method:
1. Preheat the oven to 180˚C and line a deep (at least 3cm) tray with baking paper.
2. Place all the dry ingredients (oats, flour, coconut and sugar) into a large mixing bowl.
3. Melt the butter and the syrup together.
4. Combine the bicarb soda and boiling water, mix well then add to the butter mixture.
5. Create a well in the middle of the dry mixture, then add the butter mixture and combine with a fork.
6. Transfer the mixture into the tray and press evenly into the tray with the back of a spoon. Bake for 25-30 minutes or until golden brown. Cool in the tray for at least 10min.
7. Remove and cut into slices or squares and serve.
