Inspired from Ottolenghi's Plenty More
This is the first dish in Ottolenghi's book and looks very colourful and attractive! I made it the first time straight out of the book and it was very fresh, sweet and juicy! It's a nice pretty dish for Christmas, and the labanné is a great addition to give the whole dish a bit of a creamy dressing without being overpowering or feeling too unhealthy!

Ingredients
150 g baby spinach
250 g red cherry tomatoes
250 g yellow cherry tomatoes
1 red capsicum
1 small Spanish onion
1 pomegranate
Dressing
2 garlic cloves
½ teaspoon ground all spice
1½ Tbsp pomegranate molasses
2 tsp white wine vinegar
60 mL olive oil
salt
1. Quarter the tomatoes and finely dice the onion and capsicum.
2. Prepare the dressing by combining the garlic, all spice, vinegar, pomegranate molasses, olive oil and a sprinkle of salt. Dress the tomato mixture.
3. Remove the seeds from the pomegranate.
4. Arrange the tomato mixture on a large flat plate, sprinkle over the pomegranate seeds and oregano. Drizzle with olive oil and use a teaspoon to scoop out small teaspoons of labanné over the plate.
