This is a very simple almond cookie recipe with no butter! It has a shortbread, very crumbly texture which took me a little while to decide if i liked, but have finally decided to embrace this family favourite, as it is one of mum's few baked goodies. Enjoy!

Cooking time: 20 min
Ingredients
1.5 C plain flour
0.5 C icing sugar
100 g almond meal
100 g slivered almonds
120 mL peanut (or vegetable) oil
1 egg yolk, to brush
Method
1. Preheat the oven to 170°C.
2. Sift the flour and icing sugar into a mixing bowl. Add the almond meal and slivered almonds and mix.
3. Gradually add the oil to the dry ingredients, stirring continuously until the dough holds together but is not wet.
NB. It may be easier to use your hands towards the end.
4. Roll the mixture into balls and place on a baking tray lined with baking paper.
5. Brush with the egg yolk and bake in the oven for 20 minutes, or until golden brown.
