Over the summer holidays we had the privilege of serving as a family on SUFM beach mission again as cooks. We decided this after much prayer, thought and contemplation as it had been a big year (although I'm not sure which year doesn't feel like that), but primarily that it would be our little girl's first time camping and it would be for 9 days! We had fairly typical parental concerns of how sleep would go, especially through the excitement of the night activities and having only the thin walls of the tent to separate us. However, God convicted us to respond to the need set before us and to just give it a go, knowing that we can trust Him fully and He always provides a way. We also knew we wouldn't come back from spending 9 days with God's people, sharing the good news of Jesus and feel that we shouldn't have done it.
So it was tough. We didn't have enough kitchen hands, Anneliese had her usual bouts of separation anxiety, an awful-sounding post-viral cough that woke everyone at night, distracted mealtimes, delayed bedtimes and we had our first experience using communal showers (other than at the pool, which doesn't count as one expects to actually get clean later after that). But God is good, and he did provide a loving mission family to take care of Anneliese, lots of little friends for her to play with, lots of kitchen volunteers and always just enough energy for us to get through and give Him all the glory.
It was busy, so busy that I didn't even have time to take photos (of the food especially)! The menu was fairly similar to a couple years ago though and no new recipes really other than those that were made up on the go... I've put in links to the recipes, but thought it'd still be good to have a post about this cooking adventure.
It was also fun, people were fed, nobody was poisoned, God's Word was taught and people heard about the great news that Jesus came, died and rose again!

Dinner: Pork with vermicelli salad
Day 2
Breakfast: Smashed avocado (Flemington bargain 30+ avocados for $5), tomato, basil and boiled eggs
Lunch: Chicken caesar salad |
Day 3
Breakfast: Garlic mushrooms, smashed avo, scrambled eggs |
Lunch: Roasted sweet potato, asparagus, corn and quinoa salad
Dinner: Spaghetti bolognese
Day 4
Breakfast: Pancakes
Lunch: Shepherd's pie (leftover bolognese with mash on top)
Dinner: Pizzas with green salad (vegetarian, Hawaiian, pepperoni) |
Dessert: Sticky date pudding
Day 5
Cook's day off! Finally made it about 200m away to the water park and playground to spend some time with our somewhat neglected little girl. |
Day 6
Breakfast: Bacon and fried eggs
Lunch: Paul's special chicken wings, with beetroot, carrot & kale salad and chips
Day 7
Breakfast: Sausages and baked beans
Lunch: Leftovers - chicken curry, rice, wings and salad
Dinner: Pulled pork burgers
Day 8
Breakfast: Omelettes
Lunch: Poached chicken salad, garlic bread, potato bake
Family feast night: Delicious beef roast , baked potatoes and gravy by the local butcher, plus a pasta salad with roasted sweet potato and marinated vegetables, and Chang's noodle salad |
Day 9
(early pack-up due to upcoming storm, again!)
Lunch: leftovers pasta salad, wraps - on the go!
Team dinner: Lamb and bean stew with honey carrots, garlic broccoli, corn and cous cous
Dessert: Chewy brownies, apple crumble and ice cream!
