(serves 1)
Once you've made your very own delicious pesto and hand-rolled some fresh pasta, harvested your cherry tomato plant, bean vine, zucchini plant and broccoli shrub (or bought it from a store), you can make a tantalising meal for one!
Prep time: 15 min
Cooking time: 15 - 20 min
1 zucchini
150g green beans
1 broccoli
5 cherry tomatoes
2-3 T Pesto
100g pasta
100g chicken, optional
1 garlic clove, finely chopped
salt & pepper
pecorino, to serve
Method:
1. Cut the zucchini into thin slices and saute on low heat until it looks char-grilled on both sides. Set aside.
2. Cut the chicken into bite-size pieces, season with salt, pepper and garlic.
Top and tail the beans, and chop the broccoli into bite-size pieces.
3. Boil some water, add a generous amount of salt and boil the beans and broccoli for 4-5 minutes, then drain.
4. Halve the cherry tomatoes.
5. Boil some more water and cook the pasta in salted water until al dente. Drain and set aside.
6. Heat a pan with some olive oil, and sauté the chicken, beans and broccoli for 2-3 minutes then add the zucchini and cherry tomatoes, and 1 T pesto and mix through.
7. Add the pasta and mix through pesto, salt and pepper to taste.
8. Voila! Your tantalising meal for one is ready! Serve with grated pecorino.
