White Choc Chunk Brownies

Makes 18-24 (depending on how big you want them)

Chocolate, butter and more chocolate, can't really go wrong with this recipe! This was probably one of the first baked goods to make it into my general repertoire of classic baked goodies and has stayed a faithful and frequently revisited member, loved by all!


Prep time: 30 min
Cooking time: 45 min

Ingredients:
 200g milk cooking chocolate
 150g butter
 3 eggs, lightly whisked
 1tsp vanilla essence
 3/4C (115g) plain flour
 1/4C (30g) cocoa powder
1/2C (110g) caster sugar
 200g good quality white chocolate (Cadbury dream), chopped (possibly less)

 Method:
 1. Melt butter and chocolate together (best to double boil - one pot with
 hot water, one bowl/pot on top - making sure the water doesn't touch the top
 bowl otherwise choc will burn). Keep stirring, stop once choc and butter
 are melted. Take off heat and cool for 5 min.

2. In a separate bowl, sift flour, cocoa, and sugar together.
3. Mix eggs and vanilla essence together and stir into cooled chocolate mixture.
4. Mix everything together.





5. Bake at 170°C for about 45 minutes.
6. Cut whilst warm, then allow to cool before taking out of pan.
7. Serve warm, with ice-cream if feeling super indulgent!
And you can also make the bite-size brownie version!
