I was recently reminded of this old recipe as I was brainstorming of more quick afternoon tea ideas. This was found in one of my first recipe books, given to me in my high school days, probably marking the early onset of this food obsession. It was a very sweet and thoughtful present, and everyone wrote in their own favourite recipes. This one is adapted from "Aditi's Amazing Apple Turnovers"!
Ingredients:
Prep time: 20 min
Cooking time: 15 min
3 Puff Pastry sheets (1 sheet makes 4, or 9 small ones)
3 Apples (1 per sheet)
0.5-1 T Brown sugar
1 tsp Cinnamon
30g Butter
1 egg white, lightly beaten (or 15mL milk)
Raw sugar, to sprinkle on top
Method:
1. Preheat oven to 180˚C.
2. Take the puff pastry out of the freezer to defrost.

4. Heat a pan over medium heat, and melt butter into pan, add the apples, brown sugar and cinnamon. Cook for 5 minutes or until soft. Let it cool for 2-3 minutes.
NB. This step can be skipped if short on time, you can just mix the apples with sugar and cinnamon, then put onto pastry. Cooking it first helps to soften it though.
5. Cut the pastry sheet into 4 or 9 smaller squares (depending on what size you want).
6. In one corner of the individual sheet, put a small amount of the apple mix, then fold over the pastry. Press edges down with the tip of a fork.

8. Bake for 10-15 minutes, or until golden brown.
