Cobbler: juicy cooked fruit with an attractive assembly of scones on top.I think it's named because it has a bit of a cobble-stone look? but not really sure. It's a variation of the classic fruit crumble, with the added advantage of scones at the same time: double points! Served warm with ice-cream, just too good to be true for a cold winter night in.
Prep time: 30 min
Cooking time: 45 min
Ingredients:
3-4 apples
3 pears
1 punnet strawberries
1/2 C brown sugar
1-2 tsp cinnamon
Scone mix: (1.5x)
3 C self-raising flour
3/4 tsp salt
11/2 tsp caster sugar
60g butter
3/4 C milk
1/4-1/2 C water
Method:
1. Cut up all the fruit into bite-sized pieces and mix through with the brown sugar and cinnamon.
2. Make the scone mixture with the quantities above, as per the Scone Recipe.
3. Roll the mixture into small ball shapes and place on top of the fruit.
4. Bake for 45 minutes, until scones are brown and fruit is bubbling in spaces in between.
5. Serve warm, with ice-cream!
