We were invited to cook for SUFM (Scripture Union Family Missions) at Culburra Beach (near Nowra) this summer of 2016/2017. It was a wonderful experience of meeting and living with a beautiful group of brothers and sisters in Christ. Each day we started the day spending time in God's Word, on our own and together, studying the book of Ephesians.
The team were wonderful, super organised and amazingly resourceful in preparing skits, children's programs and night events almost every day for 10 days! It reminded me of what a great blessing it is that even as some of us were strangers initially, we are united in our love and faith in Jesus.
"There is one body and one Spirit—just as you were called to the one hope that belongs to your call— one Lord, one faith, one baptism, one God and Father of all, who is over all and through all and in all." Ephesians 4:4-6
So, what do you cook for 40 people, 3 meals a day for 10 days?
How do you keep them healthy and well, with energy for teaching kids, hanging out with teenagers, faithfully and lovingly serving the Lord and their neighbours?
We didn't have a lot of time / headspace to plan as we were moving house just before this, but thankfully it all worked out. Here's the first part of our menu - links below and photos available when i had time to take them!
Day 1
Vegan: Tofu with vermicelli salad
Day 2
Breakfast: Bacon & eggs sunny side up
Lunch: Roasted cauliflower and quinoa salad (V) (Vegetarian version of Creamed leek & chicken salad) |
Dinner: Ratatouille with pasta and garlic bread (V) |
Supper: Brownies |
Day 3
Breakfast: Avocado, basil and boiled eggs
Lunch: Pulled pork buns with asian slaw Vegan: Pulled tofu |
Supper: Mango pudding
Day 4
Breakfast: Baked beans and hash browns (with chicken salt!)
Lunch: Roasted vegetable pasta salad with potato gratin |
Dinner: Paul's special chicken with boiled sweet potato, baked potato and garlic cauliflower |
Supper: Fruit with sprinkles |
