Fat-free date and coconut cake

(serves 4)
We first tried this at bible study when our friend and baker Lily brought it along. Both Paul and I spent a good 10-15 minutes being in shock that this recipe has no butter, no oil and no egg! It defies all normal cake chemistry and yet it still works! It's seriously good for what it is: 5-minute prep, just one bowl to wash and NO FAT! There is a reasonable amount of sugar in it, which i may try to experiment if using mashed banana works to replace some of it (as well as the dairy), but seriously, you won't believe it till you try it!

Prep time: 5 min
Cooking time: 40-45 min

Ingredients
1 C self-raising flour
1 C brown sugar (or just 3/4 C)
1 C dates
1 C desiccated coconut
1 C buttermilk
raw sugar (to sprinkle on top)
cinnamon dusting sugar or icing sugar (for serving)

Method
1. Preheat the oven to 180˚C and line a loaf tin with baking paper.
2. Combine all the ingredients and mix to combine well. Pour into the loaf tin, sprinkle with raw sugar on top and bake for 40-45 minutes.
3. Remove from the tin, cool for 5 minutes. Dust with icing sugar and serve warm!
