Peeler salad: carrots, fennel and radish with orange-fennel seed dressing

(serves 2-4, as a side)
So this is a bit of a cheat salad to be used on extra lazy days! It requires minimal washing up and no cooking at all! You merely use the peeler and peel everything then toss the dressing together and voila! I do like that it's nice and colourful and the orange juice works well to sweeten the fennel and the other root vegetables! 

Prep time: 15 min

Ingredients
1 purple carrot
1 orange carrot
1/2 fennel bulb
2 radish
handful of toasted pine nuts (5-10g)

Dressing
Rind and juice of 1/2 orange
1/2 tsp fennel seeds
1/2 T apple cider vinegar
1/2 T olive oil
salt and pepper

Method
1. Peel the carrots, then peel it into thin slices by slowly rotating the carrot around as you peel it.
2. Halve the fennel length-wise, then use the peeler to shave the fennel. Repeat with the radish.

3. Combine the dressing ingredients and season to taste.
4. Toss the salad and dressing together. Let it sit for about 5 minutes to allow the vegetables to soften slightly then serve chilled!
