Leftover Hambone soup

(serves 4-6)

So. much. ham. It's wonderful but overwhelming. Last week we had ham with pasta, ham with sandwiches, ham leftovers with vegetables... and finally I have frozen the remaining ham and finished up the ham journey with this leftover ham bone soup! It's a tasty broth with the simplest of vegetables but definitely does the job and is very little effort ~ perfect after a big dinner party! 
Prep time: 30 min
Cooking time: 1-2 hours (just on the stove or in the slow cooker)

Ingredients
1 leftover hambone
3-4 L water
3 cloves garlic
2 bay leaves
2 onion
3 carrots
2 potatoes
1x400g can of corn kernels, drained
1.5 C chopped leftover ham
handful of chopped parsley

Method
1. Roughly chop 1 onion and 1 carrot. 
2. Place leftover hambone with the garlic, onion, carrot and bay leaves into a pot of boiling water. Boil for around 15 minutes, then simmer for 1-2 hours. Drain the soup and remove the bone and cooked vegetables.
3. Finely dice the potatoes, the remaining onion and carrots into 1cm cubes. Add into the soup and cook for 10-15 minutes until just soft. 
4. Add in the corn kernels and ham a couple of minutes prior to serving.
5. Serve with chopped parsley on top!
