Mango pudding

(serves 6)
This refreshing dessert hardly requires any effort as it is basically just using mango jelly. It still seems very popular though whenever we serve it, especially during these hot summer days when you just want to end the night with something light. Here's to enjoying the simple things, and to the end of the mango season! :) 

Prep time: 5 min
Setting time: 4 hours

Ingredients
2 x 85g packets Mango Aeroplane jelly
500mL boiling water
400mL warm water
200mL evaporated milk
pinch of gelatin
1 mango

Method
1. Prepare the aeroplane jelly in a heatproof bowl with the boiling water and warm water, according to the instructions on the packet.
2. Add in the evaporated milk and a pinch of gelatin
3. Slice the mango into thirds, and then each side into small cubes and scoop out with a spoon. Add into the jelly.
4. If desired, place into individual servings or into a large serving bowl. Refrigerate for at least 4 hours, or until firm.
