Paul has started ordering this when we go out for brunch as it's light and refreshing (he is not really a breakfast person) and is a dish that our little one can enjoy bits of as she has a serious case of food envy these days! She will look longingly and try her best to grab at anything she can get, at least we feel comfortable giving her a bit of this rather than the savoury dishes that I would usually get! Anyhow, after ordering this a few times I realised it's really not that hard so we set about trying to make it at home. It took a few tries to get a nice blend as Acai is not very sweet or flavoursome on its own despite it's many health benefits - the banana and mango give it a more solid texture and definitely make it deliciously sweet! We also made this as a healthy snack 'cup' at our little girl's birthday party!
Prep time: 10 minutesIngredients
Acai mixture
1 large ripe banana
1/3 mango, ripe
2 packets frozen Acai (200g)
1/4 cup liquid (approximate) - milk or coconut water (for dairy-free)
To serve;
250 g of mixed berries (blueberries, strawberries, raspberries)
1 kiwi fruit
rest of the mango
1/2 cup toasted muesli
handful of toasted coconut flakes
Method
1. Run the frozen Acai packet under water and break up then place into a blender with the banana, mango and the liquid (milk or coconut water). Blend until smooth.
2. Distribute the Acai blend into a shallow bowl. Dice the fruit and arrange on top, sprinkle with muesli and coconut flakes.
