(makes 36 mini muffins)

Prep time: 10 minutes
Cooking time: 20 minutes
250 g strawberries, washed and hulled
1 medium ripe banana
1/2 cup full fat Greek yoghurt
2 eggs
1 tsp vanilla essence
1/2 cup melted coconut oil
1/2 cup milk
2 cups self-raising flour (I tried 1 cup wholemeal and was still yummy)
1 tbsp chia seeds
Method
1. Preheat the oven to 180C, and prepare a mini muffin tray by spraying with oil.
2. Puree half a punnet in the food processor, and dice the other half punnet for topping the muffins.
3. Mash the banana with a fork in a large mixing bowl. Add the pureed strawberries, yoghurt, eggs, vanilla essence, coconut oil and milk and stir to combine. Mix in the self raising flour and chia seeds until just combined.
4. Spoon a dessert spoon into each muffin hole, then top with a few pieces of cut strawberry.
