Vegetable of the Moment: Asparagus
I don't usually pay much attention to asparagus - i like it at brekkie occasionally but would never order it as it's always on the vegetarian option. However, recently it's been on special so i thought i'd try out a few things. I have to say, it's hard to go wrong with anything wrapped in pancetta but i'm definitely loving the contrast of the soft juicy asparagus and the crisp (accidentally slightly burnt on this occasion) salty pancetta!
Prep time: 5-10 min
Cooking time: 5-10 min
Ingredients:
1 bunch Asparagus
5 slices pancetta
Method:
1. Cut the pancetta in half lengthwise.
2. Wrap the asparagus with a pancetta slice.
3. Grill for about 5-10min under medium heat until asparagus is soft and pancetta starts to crisp.
