I absolutely love banana bread, it smells amazing, and toasted with a cup of tea ~ one of the best mid morning pick-me-ups! I've been meaning to put this one up for ages, but since bananas were so expensive the whole of last year i could never quite justify it! I came back in Jan and prices went from $12/kg to $2/kg - all is well again in the banana world :)
This is the easiest banana bread recipe ever! Literally, everything goes into the blender, saving all the hard work of beating sugar and butter together etc etc.. And it's delicious!
Prep time: 5 min
Cooking time: 50-55 min
Ingredients:
125g butter, softened
1C caster sugar
(amended)1C mashed banana (approx. 3 bananas)
1tsp vanilla essence
2 eggs
100ml (1/3C + 1T) buttermilk
1 1/2C (225g) self-raising flour
1/4tsp salt
1/2tsp bi-carb soda
Method:
1. Blend the butter, sugar, banana, eggs and vanilla essence.

2. Add buttermilk, and blend.
3. Mix through the flour, salt, and bi-carb soda. Blend again, but if it doesn't blend through because it's too thick, then you may want to stir it through.
4. Spray the loaf tin with oil first, then pour mixture in.
NB. You can also sprinkle caster sugar on all the sides if you want more of a crusty finish!
5. Bake at 180°C for 50 minutes. Check it's cooked in the middle with a fork or wooden skewer (needs to come out clean).
6. Remove from loaf tin, and let it cool for 5 min before serving.
