Perfect start to a cold rainy morning!
Porridge is one of those personal things; some like it runny, some like it creamy and thick, some prefer it plain whilst others try to pack a whole meal into it with fruit and nuts and compoté! Each to their own, but i'm definitely a fan of creamy porridge with warm fruit in or out!
Cooking time: 5-8 min
Ingredients:
4-5 T rolled oats
1/2 banana
1/2 tsp ground cinnamon
1 plum
1 tsp brown sugar
hot water
50 mL milk
Method:
1. Put the rolled oats and the banana cut into thin slices into a medium sized pot.
2. Fill with boiling water until the oats and banana are covered by about 1-2cm. Cook for 2-3 minutes until bubbling.
3. Add the milk to the porridge mixture and bring to the boil, add in the brown sugar and simmer for 2-3 minutes.
NB. You can add more or less liquid depending on whether you like your porridge runny or thick.
4. Meanwhile, cut the plum in half, remove the seed and put under the grill skin side up. After 2-3 minutes, flip it and sprinkle some sugar on top. Continue to leave under grill for another 1-2 minutes or until it's starting to bubble and crisp up a little.
5. Serve the porridge with plums on top!
Tips: Runny porridge - use mostly water, only a dash of milk at the end
Creamy porridge - condensed milk works well, but otherwise just using mostly milk rather than water to cook
Plain: Cinnamon, brown sugar, honey, and vanilla essence all work well to keep it plain but tasty!
Fruit and additions - i like to cook my banana, dates, apples in with the porridge from the beginning, tends to be a natural sweetener and softens the dried fruits.
