Somehow we have recently found ourselves with a couple of weekend jobs, one of which was helping to cater refreshments for our friend's wedding ceremony. At first we started out with great ambitions, but in the end decided to outsource most of the food and just make a small contribution. This super simple recipe feels a bit like a cheat to put onto the blog... but i guess when you're helping to cater for 350 guests at a wedding, a bit of cheating is ok.
I do intend on actually trying this out with real puff pastry soon, or at least a few variations of these little crunchy parcels!
Prep time: 1hrIngredients
8x12 pack vol au vent
6x250g light cream cheese
300-400g smoked salmon
3 bunches dill
6 T lemon juice
pepper
Method
1. Remove the cream cheese from the pack, soften in microwave if needed. Mix the juice and 2 1/2 bunches of finely chopped dill in and season with cracked pepper.
2. Cut the smoked salmon into short thin strips.
3. Pipe cream into vol au vent pastries
4. Curl the salmon diagonally, place on top and garnish with a sprig of dill!

Sadly the day was too chaotic to take any photos of the food. But it was a lovely day with lots of love and joy to share. Many thanks to the great St Barny's team that helped in the kitchen and hall set-up and clean-up!
